What would be a good recipe for chicken and fresh ginger.....??...?

I have both of them and don't know what to do with them.

Gingered Chicken with Mango





Ingredients


1/4 cup olive oil or vegetable oil


2 cloves fresh garlic, crushed


2 pounds chicken breast fillets, skinned


1 cup peeled and diced mangoes (make sure they're ripe)


1/3 cup brown sugar


1/4 teaspoon freshly ground cloves


2 teaspoons ground ginger


1/4 teaspoon nutmeg


1 teaspoon soy sauce


Salt and freshly ground pepper to taste





Heat the oil in a heavy frying pan. Add the garlic and saute for a few minutes. Then, add the chicken fillets. Cook for about 10-15 minutes until the chicken is cooked through.


Meanwhile, in a medium-sized bowl, combine the mango with the sugar, cloves, ginger, and nutmeg. Pour the mixture over the cooked fillets and gently mix to cover the chicken pieces. Add soy sauce, salt, and pepper to taste. Cook for about 10 more minutes. Serve hot with a fresh green vegetable and a side dish of rice.

Garlic Ginger Chicken


It is the best ever!
If you were in my shoes, what I would do is get several lemons. The in a marinade dish grind up some of the ginger, about half a stalk and mix with freshly squeezed lemon juice. Marinate the chicken you want to use for about 4 hours in the solution. Then put the chicken in a bowl. Use the marinade and mix in salt, pepper, herbal cayenne(chili) powder. Dip the chicken pieces in this and seal in floured aluminum foil(each piece). Set oven to broil and cook as normal. You can use corn cobs or corn,carrots, peas and broccoli for a vegetable. For desert just make a simple graham cracker chocolate and whipped cream pie. Put that into the freezer until just before dinner is over. The wallah your meal is complete.

If you don't like that one, just go to epicurious and search for ginger chicken. You should find a few hundred recipes containing those 2 ingredients.
Bone your chicken, take the skin off, and saute it in a little canola oil. Slice the ginger or put it through a grinder (more flavor if it's ground) and then add that to the chicken with some mushrooms and some onions. Put a cover on it and let it 'steam' for half an hour so the chicken picks up the ginger flavor. Serve over white rice or white and wild rice with 'stir fry' vegetables in black bean or oyster sauce (there are NO oysters in 'oyster sauce') ... or a salad.

mince your ginger some fresh chili , fresh corriander, lime zest and add the juice of the lime,thinly slice some lemon grass. place chicken in a baking dish and cover with mixture alow to soak for 10-15 min then bake on medium for about 25-35 min for chicken pieces or 60min - 1hr 30min depending on your oven serve with thai spiced roast vegi's {same mix as for chiken just less juice} or thai style rice. PS you could also char grill the chicken over a flame if you want to cook out doors with friends, it's great when done over the flame just remember to turn it several times and each time you turn it squeeze some more fresh lime juice over the chicken so it stay's moist . i hope this helps you out
Two good recipes, but they didn't say to peel the ginger first. It isn't harmful, but the ginger will taste better if you do.
