Does anyone have a good chicken dish recipe that is fairly simple to cook?

Baked chicken breasts - serve with smashed potatoes and steamed carrots or green beans.





Marinate them in Italian dressing for about 1 hour then roll in Italian style bread crumbs that have Parmesan and Romano cheeses mixed in - bake at 375 degrees F for 45 minutes to 1 hour depending upon how thick/big they are. Serve with smashed potatoes, green beans and maybe some gravy. It is easy, fast and very tasty.Does anyone have a good chicken dish recipe that is fairly simple to cook?
Here's one of my favorite, lower calorie than the original and a good option for the Super Bowl appetizer offerings.





Santa Rosa Hot Wings


1 lb wings


1 packet Dixie Fry


1 tablespoon chili powder


1 teaspoon cumin


dash cayenne pepper





Mix spices into Dixie Fry. Coat wings per instructions on box. Tuck into a small baking pan and bake for one hour at 350 degrees F.


Dip into non- or low-fat Blue Cheese dressing and serve with carrot and celery sticks.

Cajun Chicken!!!!!


i love cajun chicken, its so fast and easy.


First you butterfly a chicken breast, then dip it in beaten egg white, and sprinkle very generously with cajun seasoning, fry in a frying pan until its cooked through, and enjoy!


goes well cubed and in a cesar salad too!!!!

**********CHICKEN PASTA PARMESAN


2 tbsp. oil


1 lb. boneless chicken breast, cut up


1 c. mushrooms


1/4 c. chopped onions


2 tbsp. sherry


1 can cream of chicken soup


1/2 c. sliced peppers


1/2 c. grated Parmesan cheese


Brown chicken in oil. Remove. Cook onions and mushrooms in drippings, add sherry and soup. Heat through, add chicken and peppers, cover, simmer 10 minutes. Stir in cheese until melted. Serve over hot pasta.
Balsamic Lemon Chicken





1/2 cup olive oil


1/4 cup lemon juice


2 Tbsp. balsamic vinegar


1 tsp. lemon zest


1 Tbsp. dry basil


2 cloves garlic, minced


1/2 tsp. salt


1/4 tsp. pepper


4 whole boneless chicken breasts, halved





Mix all ingredients and pour over chicken. Broil in 9x13” pyrex dish for 15 minutes each side. Lest rest 10 minutes, slice in strips.
Put bread crumbs in a pie plate with a fair amount of seasonings - basil, oregano, garlic, pepper, etc. Mix an egg and some mild in a bowl then dip the chicken and coat both sides of chicken breasts with crumb mixture and put in a baking dish. Cook at 375 for 35 min or so. Voila! And it's very juicy too!





Another is put chicken breasts in baking dish. Cover with drained diced tomatos seasoned to taste. Add artichoke hearts (you can get these in a jar at supermarket) and cook at 375 for about 40 min. Yum!





Marinade chicken in italian dressing overnight. Toss in baking pan next day and cook at 375 for about 30 min.





Stir fry cubed chicken in wok oil. Add your choice of veggies. Yum!





Buy lemon-pepper seasoning at store. Place chicken breasts in baking pan. Sprinkle lots of lemon-pepper on chicken (cover the top) and bake at 375 for about 30-40 min.





I keep it as simple as I can since I work all day and don't like to spend a lot of time in the kitchen when I get home. It keeps the family happy. :-)
Take two chicken breasts (or one breast for each person eating), Put in a ziplock bag. Pour creamy Italian dressing over it (reg Italian works too but creamy is better). Zip up and make sure to push air out prior to zipping. Marinate in fridge no less than 1 hour but you can marinate as long as two days. The longer you marinate, the more flavor. Take breasts out and cook on grill or on a broiler pan. 1/2 way through cooking brush more dressing from bag on both sides of the breasts.





Cook from 15-20 min depending on your grill.





Serve with a veggie!

Baked Chicken Breasts with Cheese and Sherry - serves 6





4 chicken breasts,split


1/4 lb swiss cheese slices


1 can cream of celery soup


1/4 cup sherry


1 cup herb-flavored croutons


3 tbsp butter





Arrange chicken in a greased 2-quart shallow baking dish; put cheese slices over chicken.


Mix soup with sherry, pour over cheese.


Sprinkle with croutons, dot with butter.


Bake in preheated 350'F oven 1 hour, or until tender.
Cheesy Chicken Pasta.


Chicken.


Poach your chicken pieces in some stock and set aside, until cool enough to handle, and de-bone.


Pasta.


Place in salted boiling water and cook until you get the degree of cooking you like.


Penne or Elbows will do very well here.


Sauce.


Make a normal white sauce and add some grated tasty cheese, remove from heat and stir until it is smooth.





Combine everything and place in an oven proof dish, sprinkle with more cheese and bake until it is bubbling and the cheese has melted and started to brown.
you want really easy ! take some boneless,skinless chicken breast boil them in a pot untill they float. take them out put them in a roaster, in a small bowl take a package of lemon pie filling add 1/3 more liquid then called for to make pie filling . Pour filling over chicken, put in oven and bake at 350 C for about 30mins time may be different for different ovens. Serve with your choice of potatoes and veggies.
