A good recipe for chicken or any kind of beed?

Anything like stake or any kind of chicken? I am just tired of the same old meals.A good recipe for chicken or any kind of beed?
Easy Chinese Chicken Salad





1 cup cooked chicken, cut into small pieces


1/2 cup bean sprouts (optional)


1/4 cup chopped water chestnuts


1 green onion, thinly sliced on the diagonal





Dressing:


4 teaspoons soy sauce


1 tablespoon white wine vinegar


1/2 teaspoon sesame oil


1/8 teaspoon pepper


lettuce leaves


2 large tomatoes, cut into wedges





Combine chicken, bean sprouts, water chestnuts and green onion in a bowl. In another small bow, mix together all of the dressing ingredients. Pour over the chicken and toss well. Cover and chill, stirring occasionally if you can.





To serve, place lettuce leaves on the bottom of individual salad plates or one








Mexican Chicken Enchilada Casserole





4 boneless skinless chicken breast halves


1 - 10 ounce can condensed cream of mushroom soup


1 - 10 ounce can condensed cream of chicken soup


1 - 10 ounce can diced tomatoes with green chilies, mild or hot


10 flour tortillas


2 cups shredded cheddar cheese





Boil chicken until cooked through. Drain and cool. When cool enough to handle, tear the chicken apart.





Preheat oven to 375掳F.





In a large bowl combine the chicken, both soups, and tomatoes. Mix well.





Cut the tortillas into fourths. In a large 9';x13'; baking dish layer tortillas, then chicken mixture and cheese. Repeat another layer or two, until chicken mixture and cheese are gone, making sure the top layer is cheese. Bake until it is heated through and the cheese is melted and hot, about 30 minutes.





Great served with sour cream and salsa.

Steak and Ale





2 pounds rump roast, cut into 6 pieces (or 6 steaks of your choice)


Dijon mustard


freshly ground black pepper


vegetable oil for frying


12 black peppercorns


12 green peppercorns


8 whole allspice berries


1 1/4 cups sliced mushrooms


1 cup brown ale (Guinness or your favorite)


1 teaspoon worcestershire sauce





Preheat the oven to 375掳F.





Coat the steaks with a thin layer of Dijon mustard and lots of freshly ground pepper. Fry in a bit of oil on medium high heat, to rare. Carefully lift out the meat and set aside.





Add the peppercorns, allspice and mushrooms to the pan juices. Cook for 2 minutes. Add the beer and cook on high heat for 1 minute, then add the Worcestershire sauce. Lay the steaks in an oven proof dish and pour the beer liquid mixture over the top. Cover the dish with foil and bake for an 45 minutes to an hour.

1 chicken


40 whole cloves of garlic (really simple if you buy them in a jar)


olive oil


salt and pepper


Your favorite herb








Either purchase the chicken already cut into pieces or do it yourself (8-10 thighs are good, too)


Preheat oven to 350


Heat a heavy skillet with a bit of oil


Liberally season both sides of chicken with S%26amp;P.


Brown both sides of chicken. 3-5 minutes a side. You'll have to do this in a couple of batches.


Put the browned chicken into a baking dish or dutch oven.


Throw garlic into dish.


Drizzle the chicken and garlic with a bit of oil.


Put in your favorite herb. I've used thyme, rosemary, lemon thyme, lemon grass, whatever.


Cover and bake for around 45 minutes or the chicken reaches 165 degrees.





I serve it with some crusty bread and smear the roasted garlic on it like butter.
Something different..





Apricot chicken.





Put the chook in a big casserole dish with a tiny bit of water, some dry chicken stock powder and a tin of apricots. Also cut up an onion and throw that in also. Add some herbs if youd like, but i dont usually bother. You may need to add some four towards the end to help it thicken, and then serve it over rice.





Orange Chicken.


Coat some small pieces of chicken in flour and then fry them in butter to brown them. Then add a splash of orange juice and a tablespoon or two of brown sugar. The sauce is amazing :D
This is one of the best I have ever tried. It is a little salty though, even tho I washed the salt off of my chicken, after the ';dry brine'; process. Blotted it dry with paper towels, then put it in a pan and put it in a hot oven to dry out for a coupla minutes (remove from oven and proceed with recipe). Still it is an excellent dish.

During the last 25 minutes, I add a few root veggies like potatoes, carrots, whole mushrooms, whatever I have on hand. A few of those A few of those Pearl onions; whole.
