Chicken salad recipes?

I decided that I will make chicken salad for dinner...my first. What are some of your favorite recipes? thanks!Chicken salad recipes?
Easiest Chicken Salad:


1 foil package white meat chicken per two persons to feed


and per each package meat mix in:


1 tablespoon plain yogurt, mayonnaise, or reduced fat mayonnaise


1 teaspoon curry powder


dash salt


enough fresh-squeezed lemon juice to thin dressing


1/8 cup chopped each:


celery


onion (green, white, or red or a mixture)





Slather on fresh whole wheat bread, top with a piece of iceberg lettuce.


Cut on angle for maximum exposure.


Serve with grapes, carrot sticks, and baked potato chips.

Curried Chicken Salad





Ingredients


1 1/2 cups chopped cooked chicken breast (about 8 ounces)


1/2 cup halved seedless red grapes


1/2 cup diced peeled apple


2 tablespoons diced pineapple


1 tablespoon dried currants


3 tablespoons low-fat mayonnaise


1 teaspoon honey


1/2 teaspoon curry powder


1/2 teaspoon fresh lemon juice


1/8 teaspoon salt


1/8 teaspoon freshly ground black pepper


1 tablespoon sliced almonds, toasted


Preparation





Combine first 5 ingredients in a large bowl. Combine mayonnaise and next 5 ingredients (through pepper), stirring with a whisk. Pour mayonnaise mixture over chicken mixture; toss gently to coat. Sprinkle with almonds. Cover and chill.









Here's my personal recipe. It's wonderful. My family makes me make it every Easter with crackers %26amp; or little sandwhich's.





1 Rotisserie Chicken Lemon Pepper Flavored ( for just a little amount use 1/2 the chicken)


1 onion - chopped into little pieces


1 jar sweet/hot pepper rings - cut into pieces


1 cup mayo


1 tblspn dijon mustard (give or take add more if you want)


1 teaspoon lemon pepper


3 tblspn red wine vinegar


1 teaspoon dill weed


(for extra sweetness you may add red seedless grapes cut into halves)


Mix all together, and serve with crackers, pita bread, on a wrap, or just top a fresh green salad. Also good on a sandwhich. Yummmy
Chicken Salad With Grapes Walnuts








4 cups cubed (1/2 inch) cooked chicken (about 1 3/4 lb)


1 cup walnuts, toasted and chopped


1 celery rib, cut into 1/4鈭抜nch鈭抰hick slices (1 cup)


2 tablespoons finely chopped shallot


2 cups halved seedless red grapes


3/4 cup mayonnaise


3 tablespoons tarragon vinegar


2 tablespoons finely chopped fresh tarragon


1/2 teaspoon salt


1/2 teaspoon black pepper





Toss together all ingredients in a large bowl until combined well























Buffet Chicken Salad





3 cups diced cooked or canned chicken


1 1/2 cups finely diced celery


3 tablespoons lemon juice


1 1/2 cups seedless green and or red grapes


1/2 cup blanced almonds -- slivered and


-- toasted


1 cup mayonnaise or salad dressing


1/4 cup light cream


1 1/2 teaspoons salt


1 teaspoon dry mustard


1 dash pepper





Combine the chicken, celery and lemon juice and chill 1 hour. Add grapes (can be cut in half) and almonds. Combine mayonnaise, light cream, salt, dry mustard and pepper, then add to the chicken mixture. Toss lightly. This is especially attractive when served in a tomato-aspic ring and garnished with a small bunch of grapes
























Just take your cooked chicken and puree in a processor and I like to add Mrs. Dash to mine. If you don't like mayo you can use just enough olive oil or sour cream to smooth it out and make it spreadable. Something to keep in mind, I like to use smoked chicken and I usually put in some jambalaya rice (pre cooked of course, Uncle Ben's works well) in the processor. Definitely not traditional but very good. Serve on a sandwich and for an extra twist put some doritos on the sandwich.
I have an easy quick recipe.





Chicken breast cut into stripes (I don't know how many serving you need but one breast for two meals)





diced green one one per serving





Romaine Lettuce one whole lettuce for two servings





sesame seed





fried wonton stripes and Catalina salad dressing.





Rinse lettuce dice put in glass bowl just shake out the lettuce but leave moist cover until you are ready to eat. This will make the lettuce cold and crisp. Toss every thing in the bowl serve chicken hot or cold.
I cube the chicken or use a canned chicken. Add mayo, cut up pickles (I prefer dill), celery, onion, red grapes (cut in 1/2) or Craisins (dried cranberries), slivered almonds, and add pepper to taste.


Enjoy on toast, with a salad, or with a fruit plate.

horseradish mustard, just a squeeze


dill pickles diced


celery diced


red onion minced


sprinkle of dill


seat salt and fresh black pepper to taste...





Mix together and chill..

Green salad with chunk chicken, bacon, hard boiled egg and shredded cheese..
