Sunflower Chicken Salad





2 cups cubed cooked chicken breast meat


1 cup cubed Cheddar cheese


1/4 cup sunflower seeds


1/4 cup thinly sliced celery


1/2 cup seedless green grapes, halved


1/2 cup mayonnaise


salt and pepper to taste





In a large bowl combine the chicken, cheese, sunflower seeds, celery, grapes, mayonnaise and salt and pepper to taste. Mix all together and serve on rolls or lettuce leaves, if desired.








Southwestern Chicken Salad





2 boneless chicken breast halves, cooked and cubed


3/4 cup mayonnaise


1/4 cup chopped celery


chopped fresh cilantro to taste


1 (1 ounce) package taco seasoning mix





In a medium bowl, combine the chicken, mayonnaise, celery, cilantro and seasoning mix. Mix well.

boil chicken breast 2 to 3, cleaned of all silver and fat.


Finely chop chicken


add finely chopped pecans 1\4 cup


add finely chopped green onions, not chives, 1\8 cup


add finely chopped celery and pickles


add finely chopped green olives hanful


add finely chopped apples. 1/8


2 to 4 tablespoons of mayo, (depending on how moist you desire)


Salt and Pepper.
a whole chicken average size........put in a few cloves of garlic 2 or 3. depends on how much you like garlic, a whole small sized onion, 1/4 tsp sage and 1/4 tsp poultry seasoning, 1/4 cup of butter inside the chicken. cover and bake. cool off over night. leaving the onion etc inside. once cooled off tear the meat off the bones and dice into small pieces. use garlic mayo, homemade or store bought, determine how much you like. if you want a more moist salad ad more....if your not to keen on garlic use regular mayo. or mix reg and garlic. depends on your taste. i love garlic....so i use it alot in everything...chop the onion into very small pieces and mince the garlic. cut up celery into small pieces........smaller then the chicken pieces,fresh grated parmesan cheese. not to much. just enough. mix all together. then add to wraps or sandwiches.
