Chicken recipes?

i need a quick and easy mexican style chicken recipes and im out of rice. anyone out there have a recipe please helpChicken recipes?
Green Chile Chicken Enchilada Caserole





Depending on where you live you may or may not be able to make this dish... It is not Mexican but it is New Mexican...Authentic to the beautiful state of New Mexico!!!





Ingredients:





Chicken shredded: (about 1.5-2 lbs) cooked how you wish I usually boil it.


1 small can cream of chicken soup


1 small can cream of mushroom soup


1 dozen 6'; corn tortillas


1 lb cheddar cheese shredded


1 med-large onion (white or yellow...NOT RED) diced


2 cloves of garlic diced


Green Chile (since I was raised eating it on everything I can stand a lot of heat. You should add as much as you can handle.)





Chicken Mixture %26amp; Tortillas


In a large pot cook the onions and garlic till they are translucent. Add the soups, green chile, chicken and about 1/2 can of water. Stir all together until it boils. you may need to add more water. set aside. in a frying pan heat up some light oil (canola is fine.) once hot, individually fry the corn tortillas till soft (NOT CRUNCHY) about 4 seconds on each side.





Making the caserole:


In a caserole dish, create a layer of tortilla using 6 of your fried tortillas. then put half the chicken mixture and a ton of cheese. next 6 tortillas, rest of mixture, ton of cheese. Then bake in the oven till the cheese is all nice and melty! about 425 deg.





Feeds about 4 people. You can make more layers if you like you just need about 6 tortillas per layer.Chicken recipes?

If it's boneless skinless breasts, just poach and then shred. Put it in a skillet and add an envelope of taco seasoning and follow the package directions. You can use this mixture for tacos, burritos, etc.





If it's on the bone, just toss it in the slow cooker with a half and half blend of orange and lime juice (fresh, of course), sliced onion, some salt and a bit of Mexican oregano. It is very tasty. I do pork this way all the time, but chicken is good this way as well. I always have some fresh lime wedges to squeeze over the meat when it's done, wrap in warm tortillas and eat.

';Festive Fajitas'; - 8 servings





1 1/2 lbs. boneless chicken; skinned


1 (14 1/2 oz.) can Del Monte Mexican-Style Stewed Tomatoes


1/4 cup lime juice


1 tablespoon chopped jalapeno chile


2 cloves garlic; crushed


1 teaspoon oregano


1 teaspoon chili powder


1/2 teaspoon ground cumin


1/4 cup chopped cilantro (parsley)


1 onion; cut into 1/2'; slices


1 tablespoon oil


1 (7 oz.) can whole green chilies; drained and cut into strips


8 flour tortillas; warmed





Score chicken on both sides. In blender container, combine tomatoes, lime juice, jalapeno, garlic, oregano, chili powder and cumin. Cover and blend thoroughly; stir in cilantro. Reserve 1 cup sauce. Pour remaining sauce over meat; cover and marinate in refrigerator several hours or overnight.


Skewer onion slices lollipop style; brush with oil. Grill onion and chicken as desired. Thinly slice meat across the grain.


Fill warmed tortillas with chicken, onion rings, green chile strips and reserved sauce. Garnish with sour cream, avocado or guacamole, if desired.
MEXICAN CHICKEN





1 frying chicken


10 3/4 ounces cream of chicken soup


10 3/4 ounces cream of mushroom soup


6 1/2 ounces chicken broth


10 1/2 ounces tomatoes with green chilis, (Ro-Tel)


1 medium onion, chopped


12 ounces corn chips, (Doritos)


1 1/2 cups shredded cheddar cheese





Boil chicken and remove from bones. Heat soups, broth, and tomatoes in saucepan. Place the following in baking dish in layers: chicken, onion, corn chips, and cheese. Pour sauce over layers.


Bake at 350 F. for 30 minutes.





Serving Size: 6
slice chicken into strips and make fajitas with tortillas
