I need an easy chicken mole recipe with peanut butter not chocolate?

CHICKEN MOLE





1 cut-up chicken


4 cloves garlic, minced


1 tbsp. salt


1 tsp. pepper





Put chicken in large pot and cover with water. Add garlic, salt and pepper. Boil until chicken is done, about 45 minutes. Remove chicken and reserve 1 cup broth for gravy.





MOLE GRAVY:





1/2 c. oil


1/2 c. flour


1/4 c. chili powder


1 c. chicken broth


2 chicken bouillon cubes


1 tbsp. peanut butter


2 tsp. salt





Put oil in large skillet on medium heat. Add flour a little at a time and brown, about 1 minute. Remove from stove and stir in chili powder. Dissolve bouillon cubes in broth. Put skillet back on stove and stir in broth. Add peanut butter and salt and mix with hand mixer. Bring to boil, lower heat and simmer 30 minutes, stirring often. 2 tablespoons vegetable oil


4 pounds chicken parts


1 small onion, chopped


1 clove garlic, finely chopped


1 (24-ounce) jar ORTEGA Salsa - Thick %26amp; Chunky


1 cup chicken broth


3 tablespoons chili powder


2 tablespoons to 3 creamy peanut butter


2 tablespoons NESTL脡庐 TOLL HOUSE庐 Baking Cocoa


8 cups cooked long-grain white rice, (optional)


1/2 cup chopped fresh flat-leaf parsley, (optional)


Heat vegetable oil in a large skillet over medium-high heat. Add chicken; cook, turning frequently, for 4 to 6 minutes or until browned on all sides. Remove from skillet. Add onion and garlic; cook, stirring constantly, for 2 to 3 minutes or until onion is tender.


Stir in salsa, broth, chili powder, peanut butter and cocoa. Bring to a boil. Reduce heat to medium-low. Place chicken in sauce; cook, uncovered, for 20 to 25 minutes or until chicken is no longer pink near bone.


Combine rice and parsley in a medium bowl; serve with Chicken Mole.
