I would like some low fat recipes if you have any to share....chicken, pasta, or etc.?

LASAGNA ROLL UPS (LOW FAT)





8 lasagna noodles


1 tbsp. olive oil


2 lg. garlic cloves, minced


1 (10 oz.) pkg. frozen chopped spinach, thawed and drained well


1 c. fat free ricotta


1 tsp. salt


1 c. shredded part skim Mozzarella


1 (14 oz.) jar spaghetti sauce


Parsley sprigs for garnish





Prepare lasagna noodles as package directs, drain, and lay them flat until ready to use. Meanwhile, heat oil in 12 inch skillet over medium flame and saute garlic 2 minutes or just until tender, stirring frequently.


In medium size bowl, combine spinach, ricotta, salt, garlic and half the Mozzarella. Spread each cooked lasagna noodle with a heaping 1/4 cup of spinach mixture. Roll up firmly, jelly roll fashion. Pour spaghetti sauce into 12 inch skillet, and place rolls seam side down in skillet. Bring to a boil, then reduce heat to low, cover, and simmer 5 minutes. Sprinkle with remaining Mozzarella, cover, and simmer 3 to 5 minutes longer, or until rolls are heated through. Garnish with parsley. quick quesadilla





low fat flour tortillas


chicken breast cut in strips


reduced fat cheese shredded


pam spray


sliced onions


sliced bell pepper


seasoning for chicken (salt, blk pepper, tonys, ms dash,garlic pwdr, etc--your prefference)








Cook seasoned chicken, onoins and bell pepper in hot skillet coated with pam spray till chicken is done. i also apply a coat of pam over top after i dump it in the skillet . remove and set aside. wipe out any food stuck in the skillet or use another one. spray w pam and cook over a low flame. lay a tortilla out flat in skillet. sprinkle a thin layer of cheese,topped by chicken and veggies and then another thin layer of cheese. place all the ingredients on one half and fold over or you can cover the entire tortilla and use a 2nd one as a top. (the folded ones are easier for kids to handle.) if more spray is need while cooking, spray it directly onto the tortilla intead of the pan..works better.





you can make extra chicken and veggies and store in refer. heat mixture up 1st in microwave before making quesadilla. i have even sub chopped boiled chicken vs chicken and veggies....one of my children prefers it that way.

VEGETABLE SOUP





Ingredients


3 medium zucchini, sliced


2 medium carrots, sliced


10 mushrooms, sliced


1 medium onion, sliced


1 10-ounce russet potato, peeled, cut into 1-inch pieces


3 14 1/2-ounce cans vegetable broth


3 cups canned crushed tomatoes with added puree


1 14 1/2-ounce cans stewed tomatoes


3 tablespoons chopped fresh parsley


2 tablespoons chopped fresh cilantro


1 tablespoon chopped garlic


1 teaspoon dried basil


1 teaspoon dried oregano





Additional chopped fresh parsley


preparation


Combine zucchini, carrots, mushrooms, onion and potato in heavy large Dutch oven. Add vegetable broth, crushed tomatoes, stewed tomatoes, 3 tablespoons parsley, cilantro, garlic, basil and oregano. Bring mixture to boil. Reduce heat, cover and simmer until vegetables are tender, about 30 minutes.


Strain cooking liquid into large saucepan; reserve vegetables. Place 3 cups vegetables in blender. Add 1/4 cup cooking liquid. Puree until smooth. Stir puree into remaining cooking liquid in saucepan. Return remaining vegetables to cooking liquid. Season to taste with salt and pepper. (Can be prepared 5 days ahead. Cover and refrigerate.)


Bring soup to simmer. Ladle into bowls. Sprinkle with additional parsley.

Sorry beautiful but it doesn't look like you need to be eating low fat recipes. You look so fine!!!!!

Orange Glazed Turkey Tenders





2 teaspoons olive oil


1 pound turkey tenders


1/2 teaspoon salt


1/4 teaspoon ground black pepper


1/3 cup orange marmalade


2 tablespoons red wine vinegar


1 tablespoon peeled %26amp; grated fresh ginger


1 small navel orange cut into wedges


1 teaspoon parsley





1. In a non-stick skillet, heat oil on medium temperature until hot.





2. Place turkey tenders in skillet and sprinkle with salt and pepper.





3. Cook tenders until they are slightly browned on the outside and have lost the pink color on the inside. This will take about 4 minutes on each side.





4. While tenders are cooking, mix marmalade, vinegar and ginger in a small bowl.





5. Add this mixture to the skillet containing the turkey heat to a boil. Upon reaching the boiling point your delicious turkey entr茅e is ready for garnish.





6. Garnish with the orange wedges %26amp; parsley to serve.





Serves: 4


Each serving about 220 calories, 27g protein, 20g carbohydrate, 4g total fat (1g saturated) 68mg cholesterol, 340mg sodium.





Optional: Serve with boiled small red potatoes.


Tip: Many grocers refer to turkey tenders as turkey cutlets or vice versa.

to me it doesnt look like you need a low fat diet. just keep on doin what ya been doin cause it looks good on you.
