It's a very simple recipe with clear chicken broth.Does anyone have a recipe for chicken tortilla soup with very little or no tomatoes?
1 (15 ounce) can whole kernel corn, drained


2 (14.5 ounce) cans chicken broth


1 (10 ounce) can chunk chicken


1 (15 ounce) can black beans


1 (10 ounce) can diced tomatoes with green chile peppers, drained


DIRECTIONS


Open the cans of corn, chicken broth, chunk chicken, black beans, and diced tomatoes with green chilies. Pour everything into a large saucepan or stock pot. Simmer over medium heat until chicken is heated through.Does anyone have a recipe for chicken tortilla soup with very little or no tomatoes?

the recipe just calls for 1 cup of chunky salsa.
This is an easy chicken tortilla soup that I created after trying a few versions in restaurants and a few different recipes. I decided I also liked my soup with more of a chicken lime flavor than a tomato flavor. I never measure my ingredients, so amounts are approximate. However, I think it's a recipe that can easily be made to your own taste. Here it is:





1 small onion diced fine


1 or 2 tablespoons vegetable oil


1 or 2 teaspoons ground cumin


1 teaspoon garlic salt


cayenne pepper to taste (I put in lots)


2 or 3 small roma tomatoes seeded and chopped


1 litre container low sodium chicken broth


juice of 1 or 2 limes





Saute onion, cumin, garlic salt, and the cayenne pepper in the vegetable oil over medium-low heat for about 5 or 10 minutes till onion is cooked. Add the chopped tomatoes and continue to cook until tomatoes are soft. Add the chicken broth and simmer for about 30 minutes. Add the lime juice.





Now for the toppings (the best part!)





After ladling into bowls top with any or all of the following:





Crispy tortilla strips (cut flour tortillas into thin strips, toss with a little vegetable oil and garlic salt, and bake at a low temperature until barely light brown and crisp)


Shredded cooked chicken breast


Crumbled Feta Cheese (although not a Mexican ingredient Feta is very similar to a Queso Fresco I've eaten in Mexico and much easier to find in the local grocery stores. Its really delicious in the soup)


Chopped green onions


Diced avocados
