Sticky Chicken Wings





Ingredients (serves 4)


1/4 cup tomato sauce


1/3 cup barbecue sauce


2 teaspoons Worcestershire sauce


1/4 cup brown sugar


2 teaspoons spicy barbecue seasoning (see note) or smoked paprika


12 (1kg) chicken wings, cut in half at joint


1kg frozen potato wedges


Method


Whisk tomato sauce, barbecue sauce, Worcestershire sauce, sugar, seasoning and salt and pepper in a jug.


Place chicken in a large, shallow ceramic dish. Pour over marinade and turn to coat. Cover and refrigerate, turning occasionally, for at least 2 hours.


Preheat oven to 200掳C. Line 2 baking trays with baking paper. Place chicken in a single layer on 1 tray and potato wedges on remaining tray. Place chicken on top shelf, with potatoes underneath. Roast chicken and potatoes, turning once, for 25 to 30 minutes or until crisp and golden.

Ingredients:


1 club-size pack of chicken wings (12-24)


BARBECUE SAUCE:


2 Tbsp. soy sauce


2 Tbsp. fish sauce


1 Tbsp. minced garlic, or bottled pureed garlic


2 Tbsp. Thai Sweet Chili Sauce (available in the Asian section of most grocery stores, and all Asian/Chinese stores)


2 Tbsp. brown sugar


1/2 tsp. dark soy sauce (available at Asian/Chinese food stores), OR 1 more Tbsp. regular soy sauce


1 Tbsp. lime juice


2 Tbsp. oyster sauce


optional: 1-3 tsp. regular chili sauce (for ';hot wings';), OR 1-2 fresh chilies, minced


Preparation:


Mix all the barbecue sauce ingredients together in a small bowl. Stir until the brown sugar dissolves.


If wings are whole, cut them in half with a sharp cleaver (this makes them easier to cook and eat). Place wings in a large bowl and pour the barbecue sauce over. Stir well to coat the all chicken with sauce.


Allow to marinate at least 10 minutes (while you warm up the grill), or up to 24 hours (covered in the refrigerator).


Barbecue the wings, basting them once or twice each side with some of the leftover marinade from the bottom of the bowl. OR cook them in your oven (see next instructions).


To Cook Wings Indoors: Turn your oven on the ';Broil'; or ';Grill'; setting. Place the wings on a broiling pan (or a grill with a pan underneath to catch the drippings). Place the pan on one of the higher racks in your oven. Watch the wings carefully, as they can easily burn. Turn them every 5 minutes for 15-20 minutes, or until cooked. Baste them once or twice with the leftover marinade from the bottom of the bowl.

Now, here's a great little recipe for ';BBQ Chicken';, it's especially great for those wintery days of the year to remind you of summer!





Ingredients:





* Chicken wings


* Seasoned salt


* Adobo


* Garlic salt


* Garlic powder


* Honey


* BBQ sauce


* Oil


* Salt and flour


* Grated Almonds





Put the oil in the frying pan and turn the stove to medium heat while you season your chicken.





Put a little bit of salt all over the chicken and let it stand for about 10 minutes; the salt opens the holes in the skin of the chicken and will allow the other seasonings to permeate.





Sprinkle enough, but not too much, of each listed seasoning over the chicken.





Put some flour inside a medium sized bowl and add a little bit of each of the seasonings (also sprinkle with some grated almonds). Make sure that there is enough flour in the bowl to coat all the chicken pieces.





Check to make sure that the oil in the frying pan is hot and dip your chicken into the flour, covering it all over, then transfer it into the frying pan.





Let the chicken cook in the oil until it is golden brown all over, then poke a fork through the chicken to see if it's cooked, there shouldn't be any pink coloured meat and the juices should run clear.





Mix the BBQ sauce and honey together in a medium-sized bowl.





Preheat the oven. Take the chicken out of the pan and put it into the Honey BBQ sauce, then put it in the oven on a baking pan for about 6-8 minutes. Then serve.
Marinade your chicken in lemon juice, soy sauce and honey. Makes a lovely sticky brown coating to the chicken.
