COLA CHICKEN
(And more variations of recipe)
(My favorite: Wings or Ribs)
4 skinless, boneless chicken breasts
1 cup catsup
1 12oz. can cola (pepsi, coke, etc.)
Put chicken in a non-stick pan.
Mix together catsup and cola, pour over chicken.
Bring to a boil. Cover, reduce heat and cook 45 minutes.
(turning chicken a few times, while cooking...to prevent from
sticking to pan)
Uncover, turn up the heat and continue to cook until the sauce
becomes thick and adheres to the chicken.
It turns into the most incredible BBQ sauce. Yummmm!
You can double the recipe and use more pieces of
chicken....wings...would be ideal...add some hot
sauce....presto ';Hot
Wings';!
I have used Ribs, just as good.
I tried this recipe with 'meatballs'....was equally
as good...served over rice.
I found another variation.....omit the catsup and add a small
jar of Salsa (any variety).
I have tried using Salsa (omitting the catsup....not).
You'd think a recipe with only '3' ingredients couldn't be
messed up....wouldn't you??
Well...while I was preparing to fix the 'Cola Chicken' recipe
using Salsa.....I was also trying to carry on a conversation with my
husband...(just proves...I can't do two things at once)....mixed
Salsa %26amp; Catsup (before I realized I was supposed to leave out
the catsup) %26amp; Cola........still turned out really tasty (to me)...might
be a little sweeter than some of you like.
I fixed chicken wings, (using the above recipe)
but...I added the spices from a MILD (I don't care for ';HOT';) Buffalo Wings packet...(the kind you get to bake in the oven).....I thought it was really good.....(but you/I can't find a 'bad' way to fix chicken).
Finally....!! I fixed the 'SALSA' chicken......that's good , too.
Another (bright)idea.....I thought of trying......replace the
catsup with a bottle of Shrimp Cocktail Sauce...and add a bag of (pop corn) shrimp.....!
Fixed the shrimp with cocktail sauce......eh...wasn't all that
great...was OK...probably won't be fixing it again.
Also tried beef stew cuts......that was pretty good.....I can see
myself making this again.
Served both over rice.....think the stew cuts would have been just as
good over noodles.
How about using the little cocktail wieners/sausages?
Gonna try some butterfly cut pork chops鈥?boneless pork chops鈥?.pork steak.
CRUNCHY ONION CHICKEN
1 1/3 cups French鈥檚 Original French Fried Onions
4 boneless skinless chicken breast halves
1 egg, beaten
LIGHTLY CRUSH:
Onions in a plastic bag.
DIP:
Chicken in egg
COVER:
With onion crumbs, press firmly to adhere to chicken.
BAKE:
Preheat oven to 400 degrees.
Place chicken on lightly greased baking pan.
Sprinkle with additional onion crumbs, if desired.
Bake for 20 minutes or until no longer pink in center.
Mushroom Chicken
4 boneless/skinless chicken breast (or any pieces you like)
1 can cream of mushroom soup.
1 can water
Place chicken in crock pot (or sauce pan for stove top cooking)
mix soup %26amp; 1 can of water together
pour over chicken
cook on medium heat until boiling then reduce heat and cook until chicken is really tender %26amp; falling apart.
Serve over noodles or rice or dressing....or???

Chicken Paella
1 tbsp vegetable oil
1 onion, finely chopped
1 red pepper, deseeded and cut into thin strips
3 large skinless chicken breasts, each cut into 4 pieces
2 cloves garlic, finely chopped
1 tsp turmeric
230g can chopped tomatoes
300g/10oz Grain rice
1.2 litres/2 pints chicken stock
175g/6oz fine green beans, halved
small handful roughly chopped flat leaf parsley
lemon wedges to garnish
2 Chorizo sausage
1. Heat the oil in a large deep frying pan and fry the onion and pepper for 2鈥? minutes until softened but not browned.
2. Then stir in the chicken and garlic and cook for 4鈥? minutes.
3. Next, add the turmeric, tomatoes, rice and stock, bring to the boil and simmer uncovered for 10 minutes, stirring occasionally.
4. Then stir in the green beans, and simmer for a further 10鈥?2 minutes until nearly all the liquid has been absorbed 鈥?the mixture should be wet and not like a sauce.
5. Finally, serve sprinkled with roughly chopped flat leaf parsley and lemon wedges to squeeze over.
Chicken with Pistachio-Parsley Pesto
1 (1-pound) box fusilli
1/3 cup plus 1 tablespoon reduced-sodium chicken broth, and more if needed
1 pound cubed chicken
1 packed cup fresh parsley leaves
2 tablespoons roasted pistachio nuts
3 cloves garlic, peeled
Salt and ground black pepper
Cook fusilli according to package directions.
Heat 1 tablespoon of the broth in a large skillet over medium heat. Add chicken and cook 5 minutes, until golden brown on all sides.
Meanwhile, in a blender, combine parsley, remaining broth, pistachio nuts, and garlic. Process until smooth, adding more broth, if necessary, to create a sauce-like consistency.
Add sauce to chicken in skillet and cook 1 minute to heat through. Season, to taste, with salt and black pepper. Serve immediately.
Tarragon Chicken Salad
2 cups diced cooked chicken
1 small tart apple, cored and diced (about 1 1/2 cups)
1/3 cup diced celery
1/4 cup diced red onion
3/4 cup mayonnaise
1 tablespoon fresh lemon juice
2 tablespoons chopped fresh tarragon leaves
1 tablespoon chopped fresh parsley leaves
1 tablespoon chopped fresh chives
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/3 cup lightly salted, roasted cashews, roughly chopped
4 cups arugula, washed and dried
Olive oil, for dressing arugula
Combine the chicken, apple, celery, and onions in a medium bowl. In a small bowl, combine the mayonnaise, lemon juice, tarragon, parsley, chives, salt and pepper. Pour dressing over the chicken mixture and stir to combine. Refrigerate for at least 1 hour. Just before serving, lightly dress arugula with olive oil. Serve chicken salad on a bed of arugula and top with cashews.
easy paprika chicken (for 2, dbl up for 4)
(not spicy)
1 lemon
2 chicken breasts.
250 ml of sour creme
2 tbl spoons smoked paprika
button mushrooms
salt
peppercorns
cut slashes along chicken (about 1/4 of depth)
squeze lemon juice out over chicken, fresh rough ground peppercorns pinch of salt. marinade in bowl / bag for 30 mins
roast / grill chicken
while chicken cooking saute mushrooms whole if small / 1/2 if bigger ones. add garlic if you like it... but do not burn!
in a small pan put sour creme salt pepper mushrooms and paprika. whisk untill mixed. if too thin add dbl creme, if too thick add some milk.
when chicken cooked place on plate and pour sauce over top
This is very nice with mash potato and greens.
Chicken %26amp; Apple Fajitas
Ingredients
450 g (1lb brambly apples peeled, cored and thickly sliced
Juice of 1 lime
1 tbsps oil
2 medium onions thickly sliced
2 gloves garlic, finely chopped
1 鈥?2 red chillies, deseeded and finely chopped
1 tsp coriander
1tsp cumin
450 g (1 lb) chicken fillets cut into thick strips
Seasoning
1 tbsps fresh coriander, chopped
8 wheat tortillas
Method:
1. cut each apple slice in half and put in a bowl with the lime juice and toss together
2. heat the oil in a large frying pan, add onion and cook over a high heat for 2 mins, add garlic, chillies, spices and chicken then fry stirring for about 5 minutes until chicken is golden. Lift chicken out of the pan and set aside
3. Add apple with lime juice and 5 tbsps of water to the pan and cook with the onions for 3 minutes.
4. Return the chicken to the pan and continue to cook for a further 5 minutes, until apples are tender but still hold their shape
5. Heat the tortillas as directed on the pack. The quickest way is to transfer them to a plate, cover with film and microwave on high for 20 鈥?30 secs
6. Season filling with salt and pepper, then add fresh coriander.
7. To serve, place 2 heaped tbsps of filling in each tortilla, roll up and enjoy!
Chicken Marsala is one of my faves!
Serves 2
2 boneless, skinless chicken breasts, pounded thin
flour, spread on a plate
1/4 cup olive oil
1/2 pound of mushrooms
1/2 cup Marsala wine
2 tablespoons of butter
1/2 cup chicken broth
Salt and Pepper to taste
1. Heat olive oil in large saute pan over medium-high heat.
2. When the oil is hot, dredge both sides of the chicken breasts in flour, shake off excess flour and place in pan. Saute chicken, turning once, until lightly browned on both sides. Transfer the chicken to a warm plate.
3. Drain all but a little bit of the oil and add mushrooms. Saute the mushrooms until they begin to release their juices.
4. Add the Marsala wine, and scrape loose with a wooden spoon all browning residues on the bottom and sides of the pan.
5. Add butter, chicken broth, salt and pepper. Cook until the liquid is reduced by half, approximately 5 minutes.
6. Place the chicken breasts back in the pan and cook until heated through. Transfer the chicken breasts to warm serving plates, pour sauce over them and serve.
TERIYAKI RECIPE
INGREDIENTS
* 1 (3 pound) whole chicken, cut in half
* 3/4 cup granulated sugar
* 3/4 cup soy sauce
* 1 tablespoon grated fresh ginger
* 2 cloves garlic, minced
DIRECTIONS
1. Rinse chicken halves, and pat dry with paper towels. Place chicken cut side down in a 9x13 inch baking dish.
2. In a medium mixing bowl, combine sugar, soy sauce, grated ginger and garlic. Mix well, and pour mixture over chicken. Cover and refrigerate for at least 3 hours.
3. Preheat oven to 350 degrees F (175 degrees C).
4. Bake chicken uncovered in the preheated oven for 1 hour, basting frequently. Test for doneness, making sure there is no pink left in the meat. Let cool slightly, then cut into smaller pieces to serve.
COCO COLA CHICKEN RECIPE
Ingredients
* 1 whole chicken
* 4 tbsp cummin powder
* 2 tbsp coriander powder
* 4 tbsp ginger paste
* 2 tbsp garlic paste
* 2 tbsp onion paste
* 5 tbsp soya sauce
* 2 tbsp thick soya sauce
* 1 cinnamon stick
* 4 pcs cloves
* 2 pcs clove flowers
* 200 ml coca cola
* 6 tbsp corn oil
* 3 cups water
* 1 tbsp salt
Directions
1. Clean the chicken and cut into small bite sizes.
2. pour oil in a wok then fry the cinnamon stick, cloves and cloves flower.
3. when it pops, put the ginger, garlic, onion paste, fry till aroma rises
4. Then put the cummin, coriander powder in a slow fire ,fry well.
5. After 5 minut put the chicken in the wok and mix well.
6. Pour 3 cups of water,1 tbsp salt and cover it.
7. Cook till the chicken becomes tender.
8. Put thin and thick soya sauce cook for 5 min.
9. Lastly pour the coca cola into the gravy and serve it with plain rice.
Heat medium oven
Heat casserole with the base covered in olive oil.
4 chicken breasts
8 rashers streaky bacon,
4 Italian green peppers
4 shallot ts
2 carrots halved length ways
2 cloves cracked garlic, not essential.
Salt, pepper, balsamic vinegar
Wrap chicken breasts in streaky bacon
Put into hot casserole
Add vegetables and toss around so the are covered in oil.
sprinkle with a good pinch of salt, few shakes black pepper and a good drizzling of balsamic vinegar.
Shake the dish so every thing is moving
Cover with lid or foil
Bake for about 45 mins, at approx 150/ 160, gas mark 4. Don't rely on my times check the chicken to make sure its cooked. This is so tasty, jacket potatoes are great with this and a simple salad, pour any juices over the chicken when serving.
You could try this one, my family likes it and we have it often.

chicken breast cut into chunky strips, choose whatever seasoning you want, IE: tikka,american barbeque(must be a powder form,no sauce) sprinkle lightly over chicken, then roll chicken in desicated coconut (get it in Julian graves,or supermarket) put it under the grill for a minute or so each side. Its healthy, better than batter/breadcrums, its light in calories %26amp; it goes with anything. IE: rustic chips(skin on) rice, pasta, salad, anything really! My 18mnth old LOVES it x
