I've tried cilantro, lime and chili powder and Tequila lime recipes. Does anyone have any recipes they've tried and know are good? Lime Chicken recipes?
Garlic Lime Chicken with Mango Salsa
2 boneless skinless chicken breasts
0.5 large lime
2 garlic cloves
1.5 teaspoons olive oil
Mango salsa
1 ripe mango, peeled and chopped
1.5 very ripe roma tomatoes, chopped
0.5 sweet red pepper or yellow sweet pepper, seeded and chopped
0.5 serrano pepper
1 green onion, chopped
2 tablespoons chopped fresh cilantro
0.5 lime, juice of
1 1/2-3 teaspoons sugar (if your mangoes aren't very sweet)
salt and pepper
2 cups steamed short grain cooked brown rice
1. Combine the chicken w/ the juice of one lime and the oil and garlic in a Zip 'N Steam bag
2. For the salsa mix all the ingredients and season with salt and pepper to taste,
set aside for the flavors to blend, mean while steam the chicken breasts on till no longer pink.
3. Place 1 cup of rice on each plate cover with a chicken breast and then divide the salsa amongst the 2 plates and serve.

LIME SAUCED CHICKEN
This dish is simple to make and the sauce is wonderful.
INGREDIENTS
4 (about 1 lb. total) boneless, skinless chicken
breast halves
3/4 cup Apple LIBBY'S JUICY JUICE Premium 100% Juice
Juice from 1 lime
2 teaspoons cornstarch
1 MAGGI Chicken Flavor Bouillon Cubes
DIRECTIONS
SPRAY large skillet with nonstick cooking spray. Heat over
medium heat. Cook chicken for 8 to 10 minutes or until no
longer pink in center. Remove from skillet; keep warm.
COMBINE apple juice, lime juice, cornstarch and bouillon in
small bowl. Add to skillet; cook, stirring occasionally,
until thick. Spoon sauce over chicken to serve.
Chicken Test for Doneness
No matter what method you use for cooking chicken, the most
accurate test for doneness is a meat thermometer. Since
chicken is never ready to be served until it is done, always
be sure it is completely cooked. Whole or bone-in chicken
should reach an internal temperature of 180掳 F., and boneless
chicken should be cooked to 170掳 F.

Spicy Lime Chicken
3/4 cup tequila
1 tsp cayane
1 dark beer
1 TBSP cumin
1/2 cup teriaki marinade
1 TBSP garlic puree
1/2 cup veg. oil
Juice of 4 limes (6 oz)
Directions
Mix all ingredients and pour over chicken in a heavy plastic airtight bag. Refrigerate and let sit for more than 2 hours. Over night is best.
Bake or grill chicken.

just make roast chicken and when you marinate it instead of using lemon juice, use a lot of lime juice. Then when you are going to cook it squeeze lemon juice on it. go to allrecipies.com
