roast chicken salad. this is what i do.
either shred or slice the chicken then add to coral or cos lettuce. add tomato cut into eights and cubed fetta. a sprinkle of oregano. a few black spanish olives. even some sundried tomatoes if you wish.

You could make chicken salad, add mayo and some herbs. Or shred the meat and add some bbq sauce, heat it up and make a sandwich.

You could make an easy chicken Curry. Cut an onion or two into rings, mince a clove of garlic, saut茅 in oil or butter. When the onions become transparent add quite a bit of curry powder (and some cayenne pepper, if you like it hot), stirring. Slowly add chicken stock. Let it simmer for a few minutes. Cut the chicken into bite-sized pieces and add them to the pot. When the chicken is heated through add some heavy cream. When it comes back to a simmer thicken the mixture with corn starch dissolved in cold water, or a roux, if you prefer, and let it simmer a bit, just long enough to cook the thickening agent. That's it. Serve over rice. I like to serve sliced bananas with it, and chopped cucumber, maybe some nuts, diced apple, whatever I have around.
If you have a crockpot throw in some diced onions, celery and carrots, chicken broth (I like to add a couple of packets of chicken gravy mix too), fresh garlic, and salt %26amp; pepper and make a nice homemade soup.
You could make a pasta salad with shredded or cut up chicken. How about chicken noodle soup, its good on these cold days.
