I have two lemons that I'd like to use up cuz they're starting to get old. A nice lemon chicken dish would be great for lunch!!Does anyone have a lemon chicken recipe????
Put a lemon chicken in a pot of water and boil it for 45mins. The trick is finding a lemon chicken. Sorry, couldn't help myself.Does anyone have a lemon chicken recipe????
I just put the lemon juice in a bowl and add some rosemary then put the chicken in it for about 20 mins and then bake it. yummy and simple!
*********CHICKEN BREAST WITH LEMON
4 boneless chicken breasts
Flour for coating
Salt and pepper
1 tbsp. oil
5 tbsp. butter
2 tbsp. lemon juice
3 tbsp. chicken broth or stock
3 tbsp. chopped parsley
Cut chicken breast into 2 slices (horizontally). Season flour with salt and pepper, then coat chicken. Heat oil and 3 tablespoons butter in large skillet. Add chicken and saut茅 5-6 minutes on each side or until tender (medium-low heat). Place on a warmed serving platter and keep hot. Add lemon juice and stock to pan juices. Bring to boil. Boil 1 minute. Add parsley and remaining 2 tablespoons butter. Stir until blended. Pour over chicken.

Directions:
Place flour and seasoning in bag and add chicken and shake bag to coat chicken pieces. Heat oil in heavy duty skillet and brown chicken on both sides. Arrange chicken in oblong baking pan. Combine pie filling, water, soy sauce and vinegar and pour over chicken. Bake 375F uncovered 45 minutes to 1 hour or chicken is tender. Garnish with lemon slices and chopped parsley. Serves 4 Serve over hot rice.

I do it every sunday for its roast, and it's pretty easy :)
I like to use chicken breast and squirt lemon on them and season with lemon pepper, season all and whatever else you can think of and bake its pretty darn good! Or you could just cut the chicken up and make chicken fajitas and use the lemons that way!
Lemon chicken recipe
3 lb chicken brests, boned
1 tablespoon sherry
1 tablespoon soy sauce
1/2 teaspoon salt
2 eggs
1/4 cup cornstarch
1/2 teaspoon baking powder
2 cups vegetable oil
1/3 cup sugar
1 tablespoon cornstarch
1 cup chicken broth
1 tablespoon lemon juice
1 teaspoon salt
1 lemon
2 tablespoons vegetable oil
In large bowl, comine chicken with sherry, soy sauce and salt. Let it marinate for 15 minutes.
In small bowl, beat eggs, cornstarch and baking powder to form batter.
In a wok, heat 2 cups oil to 350 degrees F.
Coat chicken with batter. Fry until browned. Cut into bite size pieces.
Combine sugar, cornstarch, broth, lemon juice and remaining 1 teaspoon of salt.
Cut lemon into thin slices.
In a wok, heat the two tablespoons of oil.
Add lemon slices and stir fry for 30 seconds.
Slowly stir in cornstarch mixture. Stir until sauce is clear.
Pour sauce over chicken. Ready to serve.

Serves 4
Preparation time less than 30 mins
Cooking time 10 to 30 mins
Ingredients
450g/1lb chicken breasts, no skin or bone - cut into strips
1 egg white
2 tsp cornflour
good pinch salt
sesame oil
250ml/8fl oz groundnut oil
3 lemons, juice and zest
85ml/2fl oz chicken stock
1 tbsp sugar
1 tbsp light soy sauce
splash of dry sherry
1 clove garlic, crushed
1 red chilli, finely chopped
1 tsp cornflour or arrowroot - mixed with water
small bunch spring onions, shredded

Method
1. Combine the egg white, cornflour, salt, a little sesame oil and chicken in a bowl - stir to make sure the chicken is well coated. Leave for about 20 minutes.
2. Heat a wok until very hot, add some groundnut oil and heat until smoking. Remove from the heat and add the chicken - stir quickly to stop it from sticking and cook until the chicken turns white. Drain the chicken over a heatproof bowl, set the chicken to one side, allow the oil to cool and discard.
3. Wipe the wok clean and make the sauce. Add the stock, lemon juice, sugar, soy and dry sherry together with the garlic and chilli. Bring to the boil and whisk in the cornflour or arrowroot mixture. Simmer gently for a few moments and then add the chicken. Stir fry to make sure the chicken is well coated and heated through properly.
4. Add a little sesame oil as final seasoning and serve scattered with spring onions.
