Amarretto Chicken:
Marinate 2-3 Chicken Breasts for 2+ hours in italian dressing.
In a sautee pan: melt 2 tbls butter and add 2 oz (shot) amaretto (Di Serrano preferable). Let this cook over medium heat stirring occasionally until it carmalizes (this will take awhile...maybe 15+ min)
While sauce is carmalizing grill your chicken on a hot grill approximately 2 minutes per 1/4 turn %26amp; flip. Dressing will cause some flare ups of flame so watch fire so not to scorch chicken.
While chicken an sauce are working, lay out a handful of sliced almonds on a cookie sheet and place in oven on broil to toast them. Shake them often and watch VERY close; there's a very fine line between toasted and suddenly burnt to a crisp. This will take only a couple minutes.
As the amaretto and butter start to get thick and carmalized, wisk in two cups of heavy cream, and allow to simmer on low, stirring occasionally until you are ready. (add a bit more cream or just a little milk if it starts to gel up too much...you want it thick but not gelatinous).
Remove chicken from grill and thin slice with electric or carving knife at 45 degrees. Layer slices on plate and drizzle sauce over chicken generously. Sprinkle toasted almond slices over the top and serve with your choice of sides. The sauce is even good as a sweet gravy over mashed potatoes.

coca cola, worchestire sauce - perfect
CITRUS CHICKEN MARINADE
1/2 cup orange juice (juice of 1 orange)
1/2 cup lemon juice (juice of 2 lemons)
1/4 tsp rubbed sage or several leaves fresh, chopped
1 1/2 inch section fresh ginger, peeled, minced
1 tablespoon soy sauce
3 cloves garlic, minced
a few drops Tabasco or 1/4 tsp hot salt
Combine ingredients (a blender makes a good emulsion and eliminates the need to mince or chop).
Marinate cut chicken pieces in a Ziploc bag for several hours or overnight. Broil or grill until chicken until done using your preferred cooking method.
