I usually have no problem coming up with ideas for dinner, but today i am just stuck. I have 4 pounds of chicken leg quarters that I would like to have for dinner tonight. Please Help!!! Oh and I have kids, so please not spicy.I need a recipe using chicken leg quarters?
Take a shallow roasting pan, or cake pan - lay a bed of cut potatoes, yams, onions, carrots, or whatever you have on hand on the bottom. Place the chicken leg quarters on the top, skin side up. Sprinkle whatever seasoning you desire on the chicken. Put a small amount of water in the pan for steaming. Cook in the oven (375 or 400) for at least an hour or until the chicken is fully cooked. The water steams the chicken and the fat is cooked down into the bed of veggies. It's a simple preparation and once in the oven you can just forget about it. My kids like chicken and egg noodles. I just broil the chicken quarters some water, butter, salt, pepper (even add a can of chicken broth to it). Then I take the chicken out and cook my bag of egg noodles in the the broth. Sometimes we just eat the chicken like it is with the noodles and sometime I cut the chicken up and mix it in the noddles.
Or bake them in the oven with honey bbq sauce.
if you have a crockpot then throw the legs in the crock and cover with tomato sauce (jarred, canned, homemade, whatever you have or prefer) let it cook while you are at work and then serve it with freshly boiled pasta.. easiest cacciatore ever...
if it it too late to put them in the crock or you do not own a crock then you can broil them and then put them on a pot on the stovetop with the sauce.. same idea, similar result..
In a quite large pot brown chicken on all sides in extra virgin olive oil, remove when brown to plate, saute' chopped onion, green pepper and garlic in oil then add a large can of tomatoes and a regular sized can of tomato sauce...add some dried basil and thyme and cook for 15 minutes...add chicken back and put on lid and simmer for about 45 minutes...salt at end of cooking time and add a small can of drained green peas...eat with pasta, rice or potatoes...
