Balsamic chicken recipe?

I wanna find a recipe for balasmic chicken that includes fat free marinated artichokes and mushrooms but it has to be low in fat. I was wondering if anyone had one that was like this Thanks!Balsamic chicken recipe?
Have you considered White Balsamic ? White balsamic is a wonderfully delicate flavour for chicken or fish recipes. I find dark balsamic a little heavy for white meat other than as a drizzle in the form of balsamic tar. Also, I do not really like cheaper dark balsamic but find the economy white variety more palatable.





For chicken, this could be either as a dressing for a warm salad -





David's warm chicken salad with white balsamic dressing:





Chicken thigh fillets marianated in 5 tbsp white balsamic dressing, 2 tbsp low fat french dressing, hot mustard powder %26amp; pepper to taste. Marianate 2 hours, grill under hot grill, rest for 5 min %26amp; slice %26amp; serve on green salad with (if you wish) marianated artichokes and raw mushroom slices with dressing.





Dressing would be something like 1/4 cup of sparkling wine, 2tbsp white balsamic dressing (if you only have the vinegar, add extra two tsp sugar), 1 tsp sugar %26amp; cilantro + some french dressing if you want to thicken slightly.





to spice the salad up include slices of green mango (and for an asian flavour add two tbsp sesame oil %26amp; small amount of grated ginger + lime to the dressing to replace french dressing), some fried noodles for crunch.





If you prefer a hot meal:





David's white balsamic reduction:





4 tbsp White balsamic dressing


2 tsp sugar


4 tbsp boiling water


1/4 cup white wine


Cayenne pepper to taste (go easy)


pinch saffron.





Add saffron to boiling water in coffee cup, set aside.


Reduce other ingredients in saucepan. Will thicken and intensify in flavour. When this suits your tastes remove from heat and add saffron. Then let sit somewhere warm in original saucepan. After fifteen min the dressing will be a golden translucent colour with emerging saffron through the flavour. You can add sour light cream to this for a more traditional texture without adding a huge number of calories. Stir this in as the reduction is cooling and keep stirring for a while. Heat again slightly (stirring continuously) just prior to service. Serves about 2.





This can be used with just about any chicken such as grilled or steamed breast, stir fried with crisp vegetables or roasted (although I dont think you can go past traditional gravy for a roast), or - for that matter - baked, steamed or grilled fish.





To include your mushrooms and artichokes, grilled artichoke tips (fresh) would be a wonderful addition + saute mushrooms in potato mash.


David's chicken and white balsamic parcels:





For a hybrid with visual impact stir fry chicken mince (make sure it has some fat, diced thigh fillets are best), mix in bowl with finely diced red and yellow capsicum (bell pepper to you persons of the American persuasion) and serve with either dressing in crisp lettuce baskets. (ie san choy bao style) or even rolled in lettuce leaves and tied with lemon grass.Balsamic chicken recipe?
