I have actually cooked this one. My husband is the pickiest eater in the world and he loved it: (from my faves)
Spinach Fettuccine with Artichokes %26amp; Sun-Dried Tomatoes
Serves 2
1 tablespoon extra virgin olive oil
1 medium onion, finely chopped
3 medium artichokes, trimmed and sliced
2 large garlic cloves, minced
1 teaspoon fresh lemon juice
freshly ground pepper, to taste
sea salt, to taste
1/4 cup dry white wine
1/2 pound fresh spinach fettuccine, cooked until tender, drained (reserve 1/4 cups of pasta water)
6 sun-dried tomatoes, (plumped or packed in olive oil), coarsely chopped
2 teaspoons fresh thyme, chopped
Parmigiano Reggiano Parmesan, freshly grated
Saut茅 onion in oil until tender. Add artichokes, garlic, lemon juice, salt, and pepper. Saut茅 for 7 to 8 minutes (until artichokes are tender). Add the wine, simmer for a few more minutes. Add reserved water to saut茅 mixture with sun-dried tomatoes and thyme. Add pasta to mixture, toss. Season with salt and pepper and serve topped with Parmesan.
Option: use 4 oz canned artichoke hearts or bottoms instead of fresh.
Per serving: 470 calories, 14 g protein, 10 g fat (3 saturated), 64 g carbohydrates, 65 mg cholesterol, 260 mg sodium. Exchanges: 4 bread, 1 lean protein, 11/2 fat.

CHICKEN %26amp; TOMATOES OVER FETTUCINI
8 oz. oil packed sun dried tomatoes
1/2 c. chopped onion
2 cloves garlic, minced
4 chicken breast halves, skinned, boned %26amp; cut into strips
3 tbsp. chopped fresh basil or 1 tbsp. dried whole basil
1/4 tsp. salt
1/4 tsp. pepper
6 oz. fettuccine
Drain tomatoes, reserving oil. Coarsely chop tomatoes, set aside. Heat 1 tablespoon reserved oil from tomatoes in a large skillet. Saute onion and garlic in hot oil until tender. Add chicken and saute 8 minutes or until tender. Add basil and reserved tomatoes. Saute an additional 2 minutes. Add salt, pepper and an additional 2 tablespoons reserved oil from the dried tomatoes.
Cook fettuccine according to package omitting salt. Drain well and place on large platter. Spoon chicken over fettuccine and toss well. Serves 4.

MMM that sounds delicious. If I were to make a chicken fettucini with olive oil and sun dried tomatos this is what I would do.
I would start with a rotisserie chicken, take all the meat off the bone, and shred into about 2 cups.
Heat 1/4 cup olive oil in a skillet. Saute a few cloves minced garlic, drained sun dried tomatos, and a small onion, chopped fine until tender. Season with salt and pepper, sprinkle with parmesan cheese. Toss with chicken and fresh fettucini. Add a tablespoon of butter just before serving. mmmm I wish I had some sun dried tomatos right now!
