Egg Rolls





INGREDIENTS


1 pound ground pork


1 teaspoon ground ginger


1 teaspoon garlic powder


1 quart peanut oil for frying


2 tablespoons all-purpose flour


2 tablespoons water


2 cups shredded cabbage


2 ounces shredded carrots


8 (7 inch square) egg roll wrappers


2 tablespoons sesame seeds (optional)





DIRECTIONS


Season pork with ginger and garlic powder and mix thoroughly. Heat mixture in a medium skillet, stirring, until pork is cooked through and no longer pink. Set aside.


In another large skillet heat oil to about 375 degrees F (190 degrees C) or medium high heat. While oil is heating, combine flour and water in a bowl until they form a paste. In a separate bowl combine the cabbage, carrots and reserved pork mixture. Mix all together.


Lay out one egg roll skin with a corner pointed toward you. Place about a 1/4 to 1/3 cup of the cabbage, carrot and pork mixture on egg roll paper and fold corner up over the mixture. Fold left and right corners toward the center and continue to roll. Brush a bit of the flour paste on the final corner to help seal the egg roll.


Place egg rolls into heated oil and fry, turning occasionally, until golden brown. Remove from oil and drain on paper towels or rack. Put on serving plate and top with sesame seeds if desired.








Chicken Chow Main





Ingredients


1 tb vegetable oil


3 c celery; diagonally sliced


1/2 c green onions; with tops -diagonally slci


2 1/2 c chicken broth; hot


3 tb cornstarch


1/2 ts salt


1/8 ts garlic powder; or 1 cl garlic; minced


1/8 ts ground ginger


1/2 c cold water


1 tb soy sauce


3 1/4 c chicken; firmly packed -chopped coo


1 1/4 c green peppers; * chopped1 (1 cubes)


6 oz (2 cn) mushrooms; stem %26amp; -pieces; drained =o


8 oz fresh mushrooms; sliced


3 1/2 oz (1 cn) water chestnuts; -drained and sliced


3 1/2 oz chow mein noodles


2 tb candied gingrer root; finely- chopped

* For color you may want to add yellow, red and green.





Heat vegetables oil in a deep heavy cooking pot; add celery and onion;


stir-fry over moderate heat until onions are transparent but not brown. Add


chicken broth, cover and over low heat 4-5 minutes. Meanwhile, combine


cornstarch, salt, garlic, ginger, cold water, and soy sauce and mix until


smooth. Add slowly to hot mixture, stirring constantly. Cook and stir over


medium heat unitl liquid thickens and is clear. Add chicken, green peppers,


mushrooms, and water chestnuts; mix well. Cover and cook over low heat


about 5 minutes, until heated throught. To serve into a 2-quart serving


dish. Mix noodles and candied ginger and sctter on top of chicken mixture.

: 1 cup chicken-vegetable mixture plus about 1/3 cup chow mein noodles.

Orange Chicken





Ingredients


3 tbsp vegetable oil


3 lbs boneless chicken breasts, skin removed,cut into strips


1 tsp orange zest


1 tsp ground ginger


1/2 tsp onion powder


1/2 cup flour


1/2 cup orange juice


1/3 cup soy





Method





MARINADE: In a zipper bag, mix the soy sauce , orange juice, ginger, onion powder and orange peel. Mix well.


Add the chicken pieces to the marinade and leave overnight in the refrigerator, or for at least 8 hours.


Preheat oven to 350 degrees F (175 degrees C). Strain the chicken from the marinade. (Do not discard the marinade). Coat the chicken with flour. In a large skillet, heat the oil and brown the chicken over medium high heat. Transfer to a 9x13 inch covered baking dish. Pour remaining marinade over chicken. Cover and bake in the oven for 30 minutes. Remove cover and bake for 15 minutes more. Foodnetwork always has great Chinese recipes, but here's one devised by my friends, a long time ago, who hailed from both Taiwan and Thailand, called ';Ning-nong';:





Get as many veggies as possible, for example (substituting certain native, American ones for traditional Chinese ingredients--sliced broccoli can substitute for water chestnut):





garlic cloves, diced or ';squashed';


fresh ginger root, cut horizontally





carrots


celery


broccoli


onions,


scallions


snow peas


asparagus


some kind of nuts (usually peanuts)


sliced summer squash or zucchini


red and/or green pepper.





While boiling rice, begin sauteeing in a wok, with canola oil, or any other oil but olive (the taste is too strong) the above veggies in the order given (the toughest ones are first and take longer).





You can certainly add authentic Chinese elements if you have them, like bamboo shoots or water chestnuts.





As harder veggies soften, add softer ones and test repeatedly for approaching ';done-ness';.





At the end, some people add REALLY soft veggies like cabbage and/or lettuce.





Then throw in your sauces, like soy, hoisin, teriaki and so on.





Remove ginger pieces.





Finally, about 5 min. before removing from heat, add a mixture of corn starch and water, to thicken sauce (If you add too soon, it clumps!).





Serve over cooked rice.
