I bought a rotisserie chicken for dinner a few nights ago, and am just left with the carcass, which has a bit of meat left on the bones.

Break the larger bones up (exposes the marrow), and put in a pot. Peel and slice onions and carrots. Wash some celery ribs and dice. Add to the pot. Cover with COLD water. Bring slowly to a simmer, cover and reduce the heat slightly. Slow simmer it for 6 to 8 hours. Strain, and freeze the stock.Chicken stock recipe using rotisserie chicken carcass?
Add cold water, carrots, celery, a onion half, a bay leaf, some whole peppercorns, a whole clove of garlic and bring to a gentle boil. Reduce heat and simmer - do not boil, as it will make it cloudy. Let simmer as long as you can stand it - 4 or 5 hours. Fish out all the bones and veggies and strain through cheesecloth or strainer. Taste and adjust seasonings. Use or pour into a freezer container and freeze up to 6 months.
Cover the whole thing with cold water in a large stock pot.
You can use any aromatic veggies you have like onions, celery, carrots. Throw in some parsley or other fresh herbs. Add whole pepper corns if you have them. (No need for salt now).
Bring to a boil and simmer on low for several hours. Allow it to cool and then strain reserving the liquid. You can freeze it all or in portions up to 6 months. If you store it in the fridge, use it within a week.
put in a pot add some water to cover it (if trying to make alot of broth then add some chicken broth or boullion with water so it has flavor) add cut up onions carrots and celery and boil it with some salt %26amp; pepper for at least 45 minutes. skim top of broth to remove all ';ickies'; remove all veggies , throw them out and serve
