This recipe uses boiled chicken breast, Galbanzo beans and Red Kidney bean. I am sure you can use just the garbanzo beans.

I have tried this recipe. It is really good. I am sure you can put your summer squash in it as well. Afterall, it is just a Chili.

MOROCCAN CHICKEN %26amp; CHICKPEA Soup

Ingredients:

3 boneless, skinless chicken breasts, cubed

1/4 cup extra-virgin olive oil, plus more for garnish

1 large onion, diced

6 to 8 cloves garlic, minced

1/2 tsp ground cinnamon powder

1 tsp ground cumin powder

1/8 teaspoon cayenne pepper, to taste

1 heaping tsp sweet paprika

1 (14.5-ounce) can chopped tomatoes

3 (15-ounce) cans chickpeas, drained and rinsed well

1 quart vegetable broth or reduced-sodium chicken broth

pinch of sugar

Kosher salt

Freshly ground black pepper

2 medium zucchini or yellow squash

1 (5-ounce) package pre-washed baby spinach

Heat olive oil in a large soup pot over medium-high heat. Add the chicken and let it brown. Next, add the onion and the garlic. Let saute until the onions begin to turn translucent; lower heat if browning starts to occur. Add the spices and saute for another minute or so.

Now add the tomatoes, chickpeas, broth, zucchini and sugar. Season with a couple pinches of salt and 10 grinds fresh pepper. Stir well. The chickpeas should be just covered with liquid. If the level is shy, add some water so the chickpeas are just covered. Bring to a gentle simmer, then lower heat to low and gently simmer for 45 minutes. Remove soup from heat. Use a potato masher to mash up some of the chickpeas right in the pot. Stir in the spinach and let heat through until wilted, just a couple minutes. Season again, to taste, with salt and pepper.

Serve soup, drizzled lightly with extra-virgin olive oil, if desired. Serve with some Moroccan bread.

This soup is great!

Slice VERY thinly any/all of these vegetables:squash or zucchini, onions, garlic, carrots, tomatoes-really whatever you have.

Cube the cooked chicken, an avocado%26amp; some Monterrey Jack cheese.

Add some cooked rice %26amp; garbanzo beans.

Divide this in individual bowls between as many people as you are serving.

Over each bowl pour steaming hot chicken or vegetable broth. Let set 2 mins. Believe it or not, this will just cook the veggies until crunchy.

Serve w/ a nice salad.
You could blend the garbonzo beans with olive oil and garlic to make hummus! Find a recipe on line for hummus they're really easy. You could cut the chicken, grill the onions, tomatoes, and squash and put it all in some pita bread and top it with the hummus! :)
i put garbanzos in soups all the time, very popular in spanish soups, throw everything in the pot, add onions, potatoes, and some seasonings and herbs, a little celery, and let it cook, you will have one hell of a soup, happy eating.
Chic peas can be added to just about any soup recipe you can think of.

Here's some to get you started:
